Ingredients

  • 3 T Red wine vinegar
  • 2 T Olive oil
  • 2 t Oregano, dried
  • 1 c Cucumber, sliced, quartered
  • 1 c Tomatoes, cherry, quartered
  • 1 c Bell pepper, red, chopped
  • ½ c Red onion, sliced
  • 1 can Garbanzo beans, drained and rinsed (15 oz)
  • ½ c Feta cheese
  • ¼ c Kalamata olives, drained, rinsed, chopped

Directions

  1. In a large bowl, WHISK red wine vinegar, olive oil and oregano.
  2. ADD remaining ingredients and TOSS to combine.
  3. SERVE or REFRIGERATE to allow flavors to combine.
