Ingredients

2 T Onion, minced
1 t Black pepper
2 T White wine vinegar
2 T Olive oil
¼ c Basil, fresh, chopped or 1 T dried basil
1 cn Hominy, drained and rinsed (15.5 oz)
1 ½ c Lima beans, frozen, thawed
1 c Tomatoes, grape, halved
1 c Bell pepper, diced
½ c Parmesan cheese, fresh

Directions

  1. WHISK together the onion, pepper, vinegar, oil and basil.
  2. ADD lima beans, hominy, tomatoes and bell pepper. TOSS gently.
  3. CHILL then SPRINKLE with parmesan cheese before serving.
