Ingredients

  • 2 c Barley, cooked
  • 3 c Tomatoes, seeded, chopped
  • 2 c Cucumbers, seeded, diced
  • 3 Green onions, chopped
  • 3 Garlic cloves, minced
  • 1 c Parsley, fresh, chopped
  • ⅓ c Mint, fresh, chopped
  • 1 t Salt
  • ½ c Lemon juice
  • ¼ c Olive oil

Directions

  1. In a large bowl, MIX all ingredients.
  2. CHILL and STIR again before serving.
