Ingredients

  • 1 can Corn, no salt added, drained (15 oz)
  • 1 c Brown rice, cooked
  • ½ Avocado, chopped
  • ¼ c Bell pepper, red, chopped
  • ¼ c Bell pepper, green, chopped
  • ¼ c Onion, red, chopped
  • 2 T Olive oil
  • 3 T Cilantro, chopped
  • 2½ T Lemon juice
  • ¼ t Pepper
  • ¼ t Cumin
  • 8 Tomatoes, medium

Directions

  1. WASH hands with soap and water.
  2. In a large bowl, MIX all ingredients together except tomatoes and SET aside.
  3. SLICE off tops of tomatoes and REMOVE insides.
  4. FILL each tomato with ½ c corn and rice mixture.
