Ingredients

  • 2 c Brown rice, dry
  • 1 T Vegetable oil
  • 4 Green onions, sliced, keep white part separate from green
  • 1 Egg
  • 2 Egg whites
  • ¼ c Soy sauce, lower sodium
  • ¼ t Ginger (optional)
  • 1 c Peas and carrots, frozen

Directions

  1. COOK rice according to directions. RINSE and CHILL.
  2. HEAT oil in a large skillet, ADDING the white part of the green onion.
  3. SAUTÉ, adding eggs and cooking until eggs are almost done.
  4. ADD cooked rice, soy sauce, ginger and peas/carrots.
  5. STIR until soy sauce is evenly coating the rice.
  6. REMOVE from heat and ADD the green part of the onions.
  7. STIR and SERVE.
