Ingredients

  • 6 Tomatoes, roma, chopped
  • ½ c Sun-dried tomatoes, chopped
  • 3 Garlic cloves, minced
  • 2 T Olive oil
  • 2 T Balsamic vinegar
  • ¼ c Basil, fresh
  • ⅛ t Salt
  • ¼ t Black pepper
  • 1 c Mozzarella cheese, shredded, optional

Directions

  1. In a large bowl, MIX tomatoes, sundried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper.
  2. Allow the mixture to SIT for 10 minutes.
  3. USE bruschetta as a topping on a toasted baguette or on top of pasta.

*If used as a topping on bread, TOAST the bread, TOP with tomato mixture, SPRINKLE cheese on top and BROIL in the oven until the cheese is melted.
