Ingredients

  • 3 Zucchini, medium
  • 1 Onion, medium
  • 1 T Olive oil
  • 1 ½ t Thyme, fresh
  • ¼ t Salt
  • ¼ t Pepper

Directions

  1. PREHEAT oven to 450°F.
  2. Quarter and CUT zucchini into 1 ½ inch chunks.
  3. SLICE onion thinly.
  4. On a baking sheet, TOSS zucchini and onion with oil, thyme, salt and pepper.
  5. ROAST for 30 minutes, tossing halfway through. SERVE.
