Ingredients

  • 1 T Olive oil
  • ¼ c Onion, chopped
  • ¼ c Celery, chopped
  • 1 cn Hominy, drained and rinsed (15 oz)
  • 1 cn Tomatoes and chilies with lime and cilantro, drained and rinsed (10 oz)
  • 1 cn Tomatoes, diced, drained and rinsed (14 oz)
  • 8 Tortillas, whole wheat
  • ½ c Cheese, fiesta blend, reduced fat, shredded
  • Cooking Spray
  • Lettuce and tomato, if desired

Directions

  1. In a large skillet, HEAT olive oil. ADD onion and celery and COOK until translucent, about 5 minutes.
  2. STIR in hominy, tomatoes/chilies and diced tomatoes. COOK about 3 minutes.
  3. SPOON ½ c mixture on each tortilla. TOP with 1 tablespoon of shredded cheese and FOLD in half.
  4. COOK quesadillas on medium/high in a warm skillet, using cooking spray if needed and FLIPPING as needed until cooked and golden brown.
  5. CUT into wedges and SERVE with lettuce and tomato, if desired.
