Ingredients

  • ½ pkg Taco seasoning, no salt or other salt free seasoning
  • 1 ½ c Refried beans, fat free
  • 6 Tostada shells
  • ¾ c Bell pepper, chopped
  • ¾ c Onion, chopped
  • ¾ c Corn, no salt added, drained and rinsed
  • ¾ c Monterey Jack cheese, shredded, reduced fat
  • ¾ c Spinach/romaine lettuce, shredded
  • ¾ c Carrots, shredded
  • ⅓ c Salsa
  • ⅓ c Sour cream, fat free

Directions

  1. PREHEAT oven to 350°F.
  2. In a bowl, MIX taco seasoning* and beans together.
  3. SPREAD ¼ c beans on each tostada.
  4. In a large sauté pan, SAUTÉ bell pepper, onion and corn until heated through.
  5. SPRINKLE vegetable mixture on each tostada (about ⅓ on each). TOP tostadas with 2 T of cheese.
  6. PLACE tostadas on a baking sheet and BAKE until cheese is melted, about 2 minutes.
  7. REMOVE tostadas from the oven and PLACE on a plate.
  8. TOP each tostada with 2 T lettuce, 2 T carrots, salsa and sour cream. SERVE and ENJOY!
