Ingredients

  • 2 T Olive oil
  • 2 c Sweet potato, diced
  • ½ c Onion, diced
  • 4 Garlic cloves, minced
  • 1 T Chili powder
  • 1 T Southwest chipotle seasoning, no salt
  • ½ t Cumin
  • ¼ t Salt
  • 3 c Vegetable stock, low-sodium
  • 1 can Diced tomatoes, drained and rinsed (15 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • ½ c Brown rice, dry
  • 1T Lime juice

Directions

  1. WASH hands with soap and water.
  2. HEAT a large stockpot on medium-high heat. ADD olive oil, sweet potato, onion and COOK for 5 minutes.
  3. ADD garlic, chili powder, chipotle seasoning, cumin and salt. STIR to combine.
  4. ADD stock, diced tomatoes, black beans and rice. STIR to combine. BRING to a BOIL.
  5. REDUCE heat to medium-low and COVER with a lid. SIMMER for 30-40 minutes.
  6. ADD lime juice and STIR before serving.
