Ingredients

  • ½ c Refried beans, fat-free
  • 4 oz Green chilies, canned, rinsed and drained
  • 1 T Taco seasoning, Get Fresh! recipe
  • ¾ c Cheese, cheddar, shredded, reduced fat
  • 6 Tortillas, whole wheat
  • Cooking spray

Directions

  1. In a medium bowl MIX beans, green chilies, taco seasoning and cheese.
  2. SPREAD 2 T of the bean mixture on one side of each tortilla, and FOLD in half.
  3. SPRAY a large skillet with cooking spray, and HEAT to medium-high heat.
  4. PLACE the quesadillas in the skillet, and COOK for 2 minutes on both sides or until cheese is melted.
  5. CUT quesadilla into wedges and SERVE.
