Ingredients

  • Cooking spray
  • 4 Tortillas, whole wheat
  • ½ c Mozzarella cheese, part skim
  • ¼ c Cranberry sauce, jellied
  • ½ c Turkey, chopped
  • 1 c Spinach

Directions

  1. SPREAD 1 T of cranberry sauce on each tortilla.
  2. SPRINKLE 2 T of cheese, 2 T of turkey and ¼ c of spinach on each tortilla.
  3. FOLD in half.
  4. HEAT a skillet to medium heat. SPRAY with cooking spray.
  5. PLACE the quesadillas in the skillet and COOK for 3-4 minutes or until golden brown.
  6. SPRAY the top of the tortilla, FLIP and COOK again until golden brown.
