Ingredients

  • Cooking spray
  • 1 lb Ground turkey, lean
  • 1 c Onion, chopped
  • 1 Jalapeno, seeded, chopped
  • 3 Garlic cloves, minced
  • 1 cn White beans, drained and rinsed (14-15 oz)
  • 1 cn Hominy, drained and rinsed (15 oz)
  • 2 t Chili powder
  • 1 t Cinnamon
  • 1 t Oregano
  • 1 cn Vegetable broth (14.5 oz)
  • 2 c Water

Optional garnish: scallions, lime wedges, light sour cream, reduced fat cheese

Directions

  1. SPRAY a stockpot with cooking spray and BROWN the turkey with onions and jalapeño.
  2. DRAIN and RINSE the ground turkey mixture and RETURN to the stock pot.
  3. ADD garlic cloves, white beans, hominy, chili powder, cinnamon, oregano, broth, and water. Bring to a BOIL. COVER then simmer for 20 minutes.
