Ingredients

  • 1 lb Ground beef, lean
  • ½ c Onion, chopped
  • 1 c Bell pepper, chopped
  • 2 t Garlic powder
  • 2 cans Diced tomatoes, drained and rinsed (2- 14 oz cans)
  • 1 can Tomato soup, condensed (10 oz)
  • 1 can Beef broth, lower sodium (14.5 oz/2 c)
  • 2 c Rice, brown, cooked (1 c dry)
  • ½ c Cheddar cheese, reduced fat, shredded, optional

Directions

  1. In a large stock pot on medium high heat, COOK ground beef, onion and pepper until beef is cooked through.
  2. DRAIN and RINSE beef mixture and return to the pot. ADD garlic powder and MIX.
  3. ADD diced tomatoes, tomato soup and broth. STIR and continue to heat until it comes to a SIMMER.
  4. ADD rice.
  5. Continue to SIMMER for 10 minutes or until it becomes slightly thick. STIR occasionally and TOP with cheese if desired.
