Ingredients

  • 1 lb Turkey breast, cubed
  • 1 cn Pinto beans, drained and rinsed, 15.5 oz
  • 1 cn Hominy, drained and rinsed, 15.5 oz
  • 1 cn Cream corn, 14.75 oz
  • 1 cn Tomatoes, diced, drained and rinsed, 15.5 oz
  • 1 cn Tomatoes and chilies, 10 oz
  • 1 pkg Ranch dressing mix (2 ½ t)
  • 1 pkg Taco seasoning, Get Fresh! recipe (1 T + ¾ t)
  • 1 ½ c Water
Optional toppings:
Baked chips, Get Fresh! recipe
Salsa
Sour cream, light
Avocado
Shredded cheese, reduced fat

Directions

  1. In a large stock pot ADD turkey, pinto beans, hominy, cream corn, diced tomatoes and tomatoes with chilies.
  2. ADD water and bring soup to a SIMMER on medium-high heat.
  3. ADD ranch dressing seasoning and taco seasoning. On high heat, bring soup to a BOIL.
  4. SERVE with baked chips, salsa, light sour cream, avocado or reduced fat shredded cheese.
