Ingredients

  • ¼ c Olive oil
  • 1 c Onion, chopped
  • 4 Garlic cloves, minced
  • ½ c Poblano pepper, chopped
  • 3 c Butternut squash, cubed
  • 2 cans Kidney beans, drained and rinsed (15 oz ea)
  • 1 can Diced tomatoes, drained and rinsed (14 oz)
  • 2 c Vegetable broth, low-sodium
  • 1 can Green chiles, chopped, drained and rinsed (7 oz)
  • 1 can Corn, drained and rinsed (15 oz)
  • 1 T Cumin
  • 1 t Oregano
  • 1 Bay leaf
  • ¼ t Salt
  • ½ t Pepper

Directions

  1. In a large stock pot on medium-high heat, ADD olive oil, onion, garlic and poblano pepper. SAUTE for 8-10 minutes until onion is translucent.
  2. ADD remaining ingredients. STIR and COVER with a lid. SIMMER for 15-20 minutes on low. STIR occasionally.
  3. REMOVE bay leaf and SIMMER for an additional 5-10 minutes to thicken or until squash is fork tender.
