Ingredients

  • 1 ½ T Olive oil
  • 3 Garlic cloves, minced
  • 1 ½ c Onion, white or yellow, diced
  • 1 c Mushrooms, white, diced
  • 1 ½ c Bell pepper, green or red, diced
  • 25 Turkey pepperoni slices, quartered
  • ½ t Basil, dried
  • ⅛ t Crushed red pepper flakes
  • 1 t Oregano
  • 1 can Crushed tomatoes (28 oz)
  • 1 can Chicken broth, fat free, reduced sodium, (14 oz ea)
  • ½ c Mozzarella cheese, part-skim, shredded

Directions

  1. HEAT oil in a stockpot over medium heat.
  2. SAUTÉ garlic, onion, mushroom, bell pepper and turkey pepperoni until soft.
  3. ADD 1 large can of crushed tomatoes and then 1 large can of water (28 oz), broth, basil, crushed red pepper and oregano.
  4. COOK for 8-10 minutes, bringing it to a SIMMER.
  5. LADLE soup into bowls.
  6. SPRINKLE cheese on top. ALLOW cheese to melt before serving.
