Ingredients

  • 5 c Broth, beef, fat free, reduced sodium
  • 3 Carrots, medium, diced
  • 3 Celery stalks, sliced
  • ½ c Onion, diced
  • 3 Garlic cloves, minced
  • 1 t Basil, dried
  • ½ t Oregano, dried
  • ¼ t Black pepper
  • 1 cn Kidney beans, drained and rinsed (15 oz)
  • 1 cn Tomatoes, diced, drained and rinsed (14.5 oz)
  • 2 c Zucchini, halved lengthwise and sliced
  • ½ c Macaroni, whole wheat
  • ¼ c Parmesan cheese, optional

Directions

  1. In a large saucepan, BOIL broth, carrot, celery, onion, garlic, basil, oregano and pepper.
  2. STIR in beans, tomatoes, zucchini and macaroni. Return to a BOIL; COVER and SIMMER for 10 minutes or until vegetables are tender
  3. SERVE and TOP with parmesan cheese if desired.
