Ingredients

  • Cooking spray
  • 1 can Corn, drained and rinsed (15.25 oz)
  • 2 ½ c Potatoes, small dice (frozen hash brown)
  • ¼ c Onion, diced
  • ¼ c Celery, diced
  • ¼ c Bell pepper, diced
  • ¼ t Salt
  • ½ t Pepper
  • 1 t Garlic powder
  • 1 ½ t Spicy or chipotle seasoning, no salt
  • 1 can Evaporated milk (12 oz)
  • 1 can Evaporated milk fat-free (12 oz)
  • 3 can Creamed corn, lower sodium, (14.75 oz each)

Directions

  1. SPRAY a large stock pot with cooking spray.
  2. ADD canned corn that has been drained and rinsed. COOK 2 minutes on high, while STIRRING.
  3. ADD potatoes, onion, celery, bell pepper and spices. COOK 1 minute while STIRRING.
  4. ADD evaporated milks and creamed corn.
  5. STIR and SIMMER for 5 minutes.
