Ingredients

  • ½ c Onion, chopped
  • ½ c Celery, chopped
  • 1 T Margarine
  • 4 ½ c Potatoes, diced
  • 1 ¾ c Chicken broth, reduced sodium
  • 1 ½ c Water
  • 1 ½ c Milk, skim, divided (½ c and 1 c)
  • ¼ c Flour
  • 2 t Seasoning, extra spicy, no salt added

Directions

  1. In a large stock pot SAUTÉ onion and celery in margarine over medium-high heat.
  2. ADD potatoes, broth and water.
  3. In a small bowl ADD ½ c milk and flour. WHISK well.
  4. ADD milk/flour mixture to soup and STIR until mixture begins to thicken.
  5. Slowly ADD 1 c milk and seasoning to the soup and STIR as the soup returns to a BOIL. REDUCE heat and SIMMER for 5 minutes.
