Ingredients

  • 1# Pork chops, trimmed cut into ½ inch thick slices
  • 2 Bell peppers, medium, sliced
  • 1 Onion, medium, sliced
  • 1 Jalapeño, diced, without seeds
  • 2 T Olive oil
  • 3 Garlic cloves, minced
  • 1 Lime, halved
  • 1pkt Get Fresh! taco seasoning
  • 12 Whole wheat tortillas

Directions

  1. PREHEAT oven to 400˚F.
  2. In a bowl, MIX pork, bell peppers, onion, jalapeno, olive oil, garlic, 1/2 lime juiced and taco seasoning.
  3. SPRAY a baking sheet with cooking spray or line with foil. SPREAD meat/veggie mixture evenly on the baking sheet.
  4. BAKE for 25-30 minutes.
  5. PLACE tortillas in a tortilla warmer and microwave for 1 minute.
  6. AFTER meat and vegetables are done, SQUEEZE 1/2 lime on top. SERVE 1/2 c of the mixture on a warm tortilla.
