Ingredients

  • Cooking Spray
  • 1 lb Pork tenderloin, boneless, cut in strips
  • 1 c Broccoli
  • 1 c Bell pepper, red, chopped
  • ½ c Carrots, cut into strips
  • ½ c Pea pods
  • ¼ c Italian salad dressing, fat free
  • 1 T Soy sauce, low sodium
  • 1 bag Salad greens (8 oz)
  • 1 ⅓ c Brown rice, cooked

Directions

  1. SPRAY nonstick skillet with cooking spray and TURN stove to medium-high heat.
  2. ADD pork, COOK and STIR 5 minutes.
  3. ADD vegetables; COOK and STIR 2 minutes or until vegetables are cooked crisp tender and pork is cooked through.
  4. MIX dressing and soy sauce in separate container.
  5. PLACE salad greens in large salad bowl. ADD pork mixture and rice; MIX lightly with dressing.
