Ingredients

  • ½ c Chicken broth, lower sodium
  • 3 T Soy sauce, lower sodium
  • 2 T Lime juice
  • 2 t Sugar
  • 1 t Sesame oil
  • ⅛ t Ginger, dried, ground
  • ¼ c Barbecue sauce
  • Cooking spray
  • ½ lb Spaghetti noodles, whole wheat
  • 1 lb Pork, trimmed, sliced in strips
  • 2 Garlic cloves, minced
  • ½ c Carrots, sliced in strips
  • ½ c Bell pepper, red, sliced in strips
  • 4 Green onions, sliced
  • 2 T Peanuts, chopped, optional

Directions

  1. In a bowl, COMBINE broth, soy sauce, lime juice, sugar, sesame oil, ginger and barbecue sauce. SET aside.
  2. COOK pasta as directed omitting salt and fat. SET aside.
  3. SPRAY a skillet and HEAT on medium-high and COOK pork. REMOVE pork from pan and SET aside.
  4. In the same skillet, SPRAY with cooking spray and ADD garlic, carrots and bell pepper. ADD sauce mixture and bring to a BOIL.
  5. ADD cooked pasta and pork to the skillet and TOSS.
  6. SERVE pork and noodles in a bowl and TOP with green onions and peanuts, if desired.
