Ingredients

  • 1 T Olive oil
  • 4 Pork chops, boneless, trimmed
  • 16 oz Brussels sprouts, trimmed
  • 1 ½ c Sweet potato, cubed
  • 1 ½ c Potatoes, red, cubed
  • 1 T Dijon mustard
  • 1 t Garlic powder
  • ¼ t Salt
  • 1 t Black pepper
  • ½ t Oregano
  • ½ t Basil
  • 2 T Honey

Directions

  1. PREHEAT oven to 425°F. LINE baking sheet with foil.
  2. In a large bowl, TOSS brussles sprouts, sweet potatoes, potatoes and olive oil.
  3. PLACE meat and vegetables on a baking sheet.
  4. SPREAD mustard on pork chops evenly.
  5. SPRINKLE spices on top of pork and vegetables. DRIZZLE 2 T of honey on top of pork and vegetables.
  6. BAKE for 25 minutes or until pork reaches 145°F.
