Ingredients

  • 2 ⅔ c Pasta, whole wheat rotini, dry
  • 1 lb Ground beef, extra lean
  • ½ c Onion, chopped
  • 1 can Tomatoes and chilies, diced, mild, drained and rinsed
  • ½ can Tomato sauce, lower sodium (8 oz)
  • 1 can Corn, drained and rinsed (15 oz)
  • 1 c Cheddar cheese, reduced fat, shredded
  • 1 pkt Get Fresh! taco seasoning (3¾ t)

Directions

  1. COOK pasta according to directions omitting salt and fat.
  2. In a skillet, COOK ground beef and onion over medium heat for 8-10 minutes until beef is cooked through. Rinse and drain under hot water.
  3. Stir in diced tomatoes and chilies, tomato sauce, corn, pasta and taco seasoning. COOK until hot.
  4. SPRINKLE with cheese and let STAND for 2-3 minutes until melted.
