Ingredients

  • 4 Salmon steaks, 4 oz each
  • 8 t Spice mix, pre-made

Corn Relish:

  • ¼ c Onion, red, minced
  • 1 T Olive oil
  • 1 Bell pepper, large, red,
  • cut into ½ inch pieces
  • 1 c Corn, fresh or frozen, thawed
  • 2 T Lemon juice
  • 1 T Honey
  • ¼ t Black pepper
  • ¼ t Red pepper
  • ¼ c Parsley, fresh, minced

Directions

  1. PREHEAT oven to 400°F.
  2. SPRINKLE salmon steaks with spice mix.
  3. PLACE steaks on foil lined baking sheet and ROAST in oven for 10-12 minutes.
  4. While salmon is cooking, SAUTÉ onions in oil over medium-high heat. ADD peppers and COOK 1 minute.
  5. ADD corn and TURN heat to medium, COOK 2 minutes.
  6. REMOVE from heat, ADD juice, honey, black pepper, red pepper and parsley, MIX well.
  7. SERVE with salmon.
