Ingredients

  • ¼ c Sour cream, light
  • 3 T Lime juice, divided
  • ½ c Cilantro, chopped, divided
  • 3 c Cabbage, sliced
  • 1 c Tomato, chopped
  • 1 T Margarine
  • 1 lb Tilapia fillets, thawed
  • 3 Garlic cloves
  • 1 t Cumin
  • ¼ t Pepper
  • 12 Corn Tortillas
  • Lime wedges, optional

Directions

  1. MIX sour cream, 2 T lime juice, ¼ c cilantro, cabbage and tomato in a bowl and REFRIGERATE.
  2. In a large skillet, MELT margarine over medium heat.
  3. ADD fish fillets and cook 3 minutes on each side or until done.
  4. REMOVE pan from the heat and FLAKE fish fillets with a fork/spatula.
  5. SEASON fish with garlic, cumin, pepper, ¼ c cilantro and 1 T of lime juice.
  6. SPOON ⅓ c of slaw and ¼ c of fish into each tortilla and SERVE. GARNISH or use lime wedges/juice for flavor as desired.
