Ingredients

  • 1 T Vegetable oil
  • 1 lb Chicken, cut in strips
  • 1 can Pineapple chunks (20 oz)
  • 2 T Brown sugar
  • ¼ c Ketchup
  • 2 T White vinegar
  • ½ c Water, cold
  • 1 T Cornstarch
  • 1 Bell pepper, red, diced

Directions

  1. HEAT oil in large skillet ADD chicken. When almost cooked, ADD pineapple (with juice), brown sugar, ketchup and vinegar.
  2. STIR and bring to a BOIL. MIX cornstarch and water in small bowl. ADD cornstarch/water mix to skillet.
  3. STIR until thickened, ADD green onion and red bell pepper.
