Ingredients

  • Cooking Spray
  • 2 c Squash, sliced
  • 1 c Bell pepper, red, chopped
  • ½ c Onion, chopped
  • 1 T Olive oil
  • 1 pkg Spinach, frozen, thawed, chopped (10 oz)
  • 2 cans Chicken, rinsed and drained (12.5 oz each)
  • 6 Corn tortillas, torn
  • 1 can Cream of celery soup, 98% fat free
  • 1 c Sour cream, light
  • 1 c Salsa
  • 1 can Green chilies, rinsed and drained (4 oz)
  • 1 pkg Taco seasoning, no salt added (1 T + 1 ¼ t)
  • 1 c Cheddar cheese, shredded, 2%

Directions

  1. PREHEAT the oven to 350˚F and SPRAY a 9x13 inch dish with cooking spray.
  2. SAUTÉ squash, bell pepper and onion in olive oil in a large stock pot over medium-high heat for about 6 minutes.
  3. REMOVE from heat and STIR in spinach, chicken, tortillas, cream of celery soup, sour cream, salsa, green chilies and taco seasoning.
  4. SPOON into baking dish, SPRINKLE with cheese and BAKE for 30 minutes.
  5. CUT casserole into 15 servings (3x5) and ENJOY!
