Ingredients

  • 2 T Olive oil
  • 2 c Onions, cubed
  • 1 c Bell pepper, chopped
  • 2 Garlic cloves, minced
  • 32 oz Chicken broth, fat-free, less sodium
  • 4 c Water
  • 2 cans Chicken, drained and rinsed, (12.5 oz ea)
  • 1 can Green chilies, drained and rinsed (4 oz)
  • 2 cans Cannellini beans, drained and rinsed (15 oz ea)
  • 2 cans Hominy, drained and rinsed (15 oz ea)
  • 1 T Chili powder
  • 1 T Cumin
  • 1 T Oregano

Directions

  1. In a large stock pot, HEAT olive, oil, onions and pepper on medium heat until soft.
  2. STIR in garlic and COOK 1-2 minutes.
  3. STIR in chicken broth, water, chicken, green chilies, beans, hominy and spices.
  4. Bring to a BOIL, then REDUCE heat to LOW and COVER for 10-15 minutes.
