c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 1 T Olive oil
  • 2 T Honey
  • 3 T Lime juice
  • 3 T Cilantro, chopped
  • Cooking spray
  • 2 c Chicken breast, chopped
  • ½ c Bell pepper, green
  • ¼ c Onion, red, minced
  • 2 c Peaches frozen
  • ½ c Blueberries, fresh or frozen
  • 8 Lettuce leaves, large


  1. COMBINE 1 T olive oil, 2 T honey, 3 T lime juice and 3 T cilantro in a large bowl. MIX well and SET aside.
  2. SPRAY a large skillet with cooking spray. ADD 2 c chicken and COOK until done.
  3. To the skillet ADD ½ c bell pepper, ¼ c onion, 2 c peaches, and ½ c blueberries, if frozen. MIX well and COOK until heated through but not mushy.
  4. ADD chicken mixture to large bowl and TOSS. SPOON about ½ cup of chicken mixture into each lettuce leaf and serve (similar to a taco).
