Ingredients

  • 1 ¼ lb Chicken, boneless, skinless, cut into chunks
  • 4 c Water
  • 14.5 oz Chicken broth, lower sodium
  • 2 T Onion, dried, minced
  • ½ t Black pepper
  • ½ t Thyme
  • 1 t Parsley, dried
  • 1 c Carrots, diced
  • 1 c Celery, diced
  • 1 ¼ c Bakery mix, low-fat
  • ¼ c Water

Directions

  1. In a large stock pot, PLACE chicken, 4 c water, broth, onion, pepper, thyme, parsley, carrot and celery. HEAT on high until it comes to a boil. COOK for 5 minutes. REDUCE heat to medium and continue to COOK for another 6-8 minutes.
  2. While chicken mixture is cooking, prepare the dumplings. MIX bakery mix and ¼ c of water in a medium bowl. POUR dough onto a floured surface and lightly KNEAD.
  3. PINCH off 20-24 pieces of dough for the dumplings. You can flatten them or roll into dough balls.
  4. Slowly DROP dumplings into chicken mixture. STIR often so the dumplings don’t stick together
  5. Continue to COOK on medium heat for 20-25 minutes. STIR occasionally.
