Ingredients

  • 2 cans Chicken, drained and rinsed (10-12 oz)
  • 2 T Taco seasoning, Get Fresh! recipe
  • 2 c Mexi-blend cheese, divided
  • 2 c Greek yogurt, plain, fat-free
  • 1 can Green chilies, (4 oz)
  • 10 Tortillas, whole-wheat
  • 1 can Cream of chicken soup, healthy choice (10.5 oz)

Directions

  1. WASH hands with soap and water.
  2. PREHEAT oven to 350 F.
  3. In a large bowl, MIX chicken, taco seasoning, and 1 c cheese. MIX well in order to break up larger chunks of chicken.
  4. ADD yogurt, cream of chicken soup and green chilies. MIX well.
  5. SPREAD ½ c of chicken mixture in the bottom of a 9x13 baking dish.
  6. PLACE ⅓ c of chicken mixture in a tortilla and roll up. PLACE seam-side down in the baking dish. REPEAT for remaining tortillas.
  7. Spread any leftover mixture on top of the tortillas in the dish.
  8. Top with 1 c of cheese. BAKE for 20 minutes.
