Ingredients

  • 12 Wonton wrappers
  • ½ c Bell pepper, chopped
  • 1 c Chicken, cooked, shredded
  • 1 T Taco seasoning, Get Fresh! recipe
  • ½ c Refried beans, fat free
  • 4 oz Green chilies, drained and rinsed
  • ½ c Cheddar cheese, reduced fat, shredded

Directions

  1. PREHEAT the oven to BROIL. SPRAY a muffin tin with cooking spray.
  2. PLACE 1 wonton wrapper in each muffin tin cup and form into a cup shape. SPRAY with cooking spray and PLACE under broiler for 3 minutes to crisp shells. REMOVE from oven.
  3. In a medium pan, SAUTÉ bell pepper. ADD chicken, taco seasoning, refried beans and green chilies. MIX well and HEAT through.
  4. PLACE 2 T of chicken mixture into each cup. TOP evenly with cheese.
  5. PLACE in the oven under the broiler on LOW until the cheese is melted and the mixture is heated through, 1-2 min.
