Ingredients

  • ½ T Olive oil
  • 1 c Bell pepper, chopped
  • 2 cans Chicken, drained and rinsed (12 oz ea)
  • 1 cn Diced tomatoes, drained and rinsed (15 oz)
  • 1 cn Black beans, drained and rinsed (14 oz)
  • 1 T Onion powder
  • 2 t Garlic powder
  • 1 T Chili powder
  • 2 t Cumin
  • 2 c Rice, brown, cooked
  • ½ c Colby jack cheese, shredded

Directions

  1. In a large skillet on medium heat SAUTE` olive oil and bell pepper un-til tender.
  2. ADD chicken, tomatoes, black beans, spices and rice. MIX well and TOP with cheese. SERVE in a bowl.
  3. GARNISH with baked chips, salsa and guacamole, if desired
