Ingredients

  • Cooking spray
  • 2 cans of Chicken breast, drained and rinsed (2-12.5 oz cans)
  • 1 can Green chilies, diced (4 oz)
  • ½ c Cheddar cheese, shredded, reduced fat
  • 24 Corn tortillas
  • 2 T Taco seasoning, Get Fresh recipe

Directions

  1. WASH hands with soap and water.
  2. PREHEAT oven to 425 F. SPRAY a baking sheet with cooking spray.
  3. MIX chicken, green chilies, cheese and seasoning in a large bowl.
  4. WARM tortillas in the microwave and keep COVERED until ready to use.
  5. In the middle of each tortilla, ADD 2 T of the chicken mixture and ROLL up tightly.
  6. PLACE taquitos seam side down on the baking sheet. SPRAY with cooking spray and BAKE for 12 minutes.
*3 c of canned beans/refried beans can be used in place of the canned chicken, if desired.
