Ingredients

  • 1 lb Ground beef, lean
  • 1 ½ T Taco seasoning, Get Fresh! recipe
  • 1 can Black beans (15 oz), drained and rinsed
  • 1 can Corn (15 oz), drained and rinsed
  • 1 can Diced tomatoes/chilies (10 oz), drained and rinsed
  • 2 c Brown rice, cooked
  • ½ c Fiesta blend/cheddar cheese, reduced fat (divided ¼ c & ¼ c)
  • 1 c Cottage cheese, low-fat

Directions

  1. In a large skillet, BROWN ground beef until cooked through. DRAIN, RINSE and RETURN to skillet.
  2. To the skillet, ADD taco seasoning, beans, corn, tomatoes/chilies, rice, cottage cheese and ¼ c shredded cheese. MIX well and HEAT on medium (3-5 minutes) or until heated through.
  3. TOP with remaining ¼ c cheese and SERVE.
