Ingredients

  • Cooking spray
  • 1 lb Ground beef, extra lean
  • 9 Tortillas, whole wheat, warmed
  • 1 T Taco seasoning, Get Fresh recipe
  • 20 oz Enchilada sauce, red  (2-10 oz cans)
  • 1 ½ c Mexican cheese, shredded reduced fat, divided ¾ c & ¾ c

Directions

  1. PREHEAT oven to 375°F.
  2. In a large skillet, BROWN ground beef on medium high until cooked through. RINSE and DRAIN under warm water and RETURN to skillet.
  3. ADD taco seasoning and 1 can (10 oz) of enchilada sauce and SIMMER on low for 5 minutes. ADD 3/4 c cheese and MIX well.
  4. FILL each tortilla with a 1/4 c of the mixture. ROLL tortilla and PLACE seam side down in a 9x13 inch baking dish sprayed with cooking spray.
  5. REPEAT with remaining beef filling and tortillas. TOP with remaining cheese (3/4 c) and enchilada sauce (10 oz).
  6. BAKE for 20 minutes.
