Ingredients

  • 1 T Soy sauce, lower sodium
  • 1 t Rice vinegar
  • 1 t Sugar
  • ¾ lb Steak, strip steak, thinly sliced
  • 1 T Vegetable oil
  • 14 oz Asparagus, trimmed, cut into 2-inch lengths
  • 8 oz Snap peas
  • 1 Garlic clove, minced
  • Pinch Ginger, ground
  • 1 t Lemon juice
  • 2 c Rice, brown, cooked

Directions

  1. In a pie pan, MIX together soy sauce, vinegar, and sugar.
  2. PLACE steak in dish and let SIT for 15 minutes to marinate, TOSS often.
  3. In a large skillet, HEAT oil over high heat and ADD the steak.
  4. HEAT steak until cooked through, FLIPPING occasionally.
  5. ADD the asparagus, snap peas, garlic, ginger and lemon juice to skillet. STIR constantly (add a little water if pan gets too dark) until vegetables are crisp-tender, about 4 minutes.
  6. SERVE steak and vegetables over rice.
