Ingredients

  • 1 Roast, 2-3 lb
  • ¼ c Lime juice
  • ½ c Water
  • ½ t Cayenne pepper
  • 1 t Cumin
  • 1 T Oregano
  • 3 Garlic cloves, minced
  • 1 t Black pepper

Directions

  1. PLACE roast in a slow cooker.
  2. POUR lime juice and water over the roast.
  3. ADD remaining ingredients.
  4. COOK on medium-high for 5-6 hours or until tender and reaches 145°F.
  5. SHRED with 2 forks or slice and SERVE with corn tortillas, baked chips or vegetables.
