Ingredients

  • 1 lb Ground Beef, extra lean
  • ½ c Onion, chopped
  • 1 Egg white
  • ½ c Crackers, saltine, crushed (~13 crackers)
  • 1 ½ c Cheese, cheddar, shredded, divided (1 c + ½ c)
  • 1 c Salsa, divided (½ c + ½ c)
  • Cooking spray
  • 1 ⅓ c Water
  • 1 ½ c Potato flakes, instant
  • ⅓ c Milk, skim
  • ¼ t Garlic powder
  • ½ t Black pepper

Directions

  1. HEAT oven to 400°F.
  2. MIX ground beef, onion, egg white, crackers, 1 c of cheese and 1/2 c salsa in a bowl.
  3. SPRAY a 12– cup muffin tin with cooking spray. DIVIDE the mixture among the 12 cups (~ 1/3 c) and PRESS lightly.
  4. USE the back of a spoon and PRESS into the center of each meat loaf making an indention.
  5. BAKE for 20-25 minutes. TOP with remaining salsa. BAKE for 3 minutes.
  6. In a saucepan, BOIL 1 1/3 c water. ADD potato flakes and STIR well.
  7. REMOVE from heat and MIX in milk, spices and 1/2 c cheese.
  8. REMOVE meatloaves from the pan, TOP with mashed potatoes (~ 2 1/2 T) and SERVE.
