Ingredients

  • 1 lb Ground Beef, extra lean
  • ½ c Onion, chopped
  • 1 Egg white
  • ½ c Crackers, saltine, crushed (~ 10 crackers)
  • 1 ½ c Cheese, Mexican blend, reduced fat shredded, divided (1 c + ½ c)
  • 1 c Salsa, divided (½ c + ½ c)
  • Cooking Spray

Directions

  1. PREHEAT the oven to 400°F.
  2. MIX ground beef, onion, egg white, crackers, 1 c of cheese and 1/2 c salsa in a bowl.
  3. SPRAY a 12 cup muffin tin with cooking spray. DIVIDE the mixture among the 12 cups (~ 1/3 c) and PRESS lightly.
  4. Use the back of a spoon and PRESS into the center of each meat loaf making an indentation.
  5. BAKE for 20-25 minutes. TOP with remaining salsa and cheese. BAKE for 3 minutes or until cheese is melted.
