Ingredients

  • ½ c Carrot, shredded
  • ½ c Onion, chopped
  • 2 Garlic cloves, minced
  • ¼ c Parsley, minced
  • ½ c Parmesan cheese
  • 2 Egg whites
  • 1 c Breadcrumbs, Italian seasoned
  • 3 T Ketchup
  • ½ t Salt
  • ½ t Pepper
  • 1 lb Ground beef, extra lean
  • Cooking spray

Directions

  1. PREHEAT oven to 400°F.
  2. In a large bowl, MIX all ingredients except the ground beef.
  3. ADD the ground beef and MIX well.
  4. COVER a baking sheet with foil and SPRAY with cooking spray. ROLL mixture into meatballs, 2T each, and PLACE on baking sheet.
  5. BAKE for 20-25 minutes or until cooked through.
  6. Freezer directions: PLACE meatballs in a freezer bag before baking. When ready to bake, THAW then bake as directed above. If cooking from frozen state increase baking time by 30 minutes.
