Ingredients

  • 1 lb Ground beef, lean
  • 2 T Taco seasoning, Get Fresh! recipe
  • 1 can Refried beans, fat-free (15 oz)
  • 16 Corn tostadas
  • 1 can Enchilada sauce, red (10 oz)
  • 3 c Mexican blend cheese, shredded, reduced fat
  • Cooking spray

Optional toppings:

  • 1 c Lettuce, chopped
  • 1 c Tomato, chopped
  • ½ c Black olives, sliced
  • Avocado, sliced

Directions

  1. WASH hands with soap and water.
  2. HEAT oven to BROIL.
  3. In a large skillet, COOK ground beef until done. DRAIN, RINSE and RETURN back to skillet.
  4. ADD taco seasoning and HEAT on medium-high heat. MIX well.
  5. STIR in refried beans with the beef, reduce heat to low and MIX for 2-3 minutes. REMOVE from heat.
  6. SPRAY a large baking sheet with cooking spray and place half the tostadas on the pan.
  7. ADD ⅓ c beef and bean mix to each tostada and spread evenly.
  8. ADD 2 T of cheese to each tostada and PLACE another tostada shell on top.
  9. PLACE 2 T of enchilada sauce on top of each tostada shell, spreading evenly. TOP with ¼ c cheese.
  10. BROIL 2-3 minutes. TOP with optional toppings.
