Ingredients

  • Cooking spray
  • ½ c Applesauce
  • ½ c Sugar
  • ½ c Egg powder (according to directions to equal 4 eggs) or 2 eggs and 2 egg whites
  • 1 c Water (according to directions to equal 4 eggs), omit water if using fresh eggs
  • 1 t Vanilla
  • 1 c Flour
  • 1 t Baking powder
  • ½ t Cinnamon
  • ¾ c Dried plums, divided, diced (½ c and ¼ c)
  • ¼ c Pecans, optional

*Dried egg mixes may vary. Use appropriate amount of dried egg mix and water according to the package directions. For this recipe use egg mix/water to equal 4 eggs.

Directions

  1. PREHEAT oven to 375°F. SPRAY a pie dish with cooking spray.
  2. In a large bowl, MIX applesauce and sugar.
  3. In a separate bowl, MIX egg powder and water or eggs/egg whites and vanilla. ADD egg mixture to applesauce mixture.
  4. ADD flour, baking powder and cinnamon to the applesauce/egg mixture. MIX until smooth.
  5. FOLD in ½ c dried plums and pecans, if desired.
  6. SPREAD mixture in the pie dish and TOP with remaining dried plums.
  7. BAKE for 30-35 minutes until top is lightly browned.
