Ingredients

  • 1 ¼ c Whole wheat flour
  • 2 t Baking powder
  • ¼ c Egg substitute
  • 1 c Milk, skim
  • ½ t Salt
  • 1T Sugar substitute
  • ½ c Blueberries, fresh
  • Cooking Spray

Directions

  1. MIX flour and baking powder together, SET aside.
  2. In a separate bowl, BEAT the egg, milk, salt and sugar substitute.
  3. STIR in flour until moistened. ADD blueberries and FOLD together gently.
  4. PREHEAT an electric griddle to 300°F and SPRAY with cooking spray.
  5. POUR ¼ c of the batter on the pan. COOK until bubbly, about 1-2 minutes.
  6. FLIP and continue cooking until golden brown.
