Ingredients

  • ½ c Flour
  • ½ c Whole wheat flour
  • 2 t Baking powder
  • 1 T Brown sugar
  • ½ t Cinnamon
  • Pinch Nutmeg
  • 1 c Milk, skim
  • 2 t Applesauce
  • ½ c Egg substitute
  • ½ c Sweet potato (cooked tender, peeled and mashed or canned, rinsed and mashed)
  • Cooking Spray

Directions

  1. MIX flours, baking powder, brown sugar, cinnamon and nutmeg in a large bowl.
  2. In a separate bowl, MIX the milk, applesauce, egg and sweet potato.
  3. ADD the wet ingredients to the dry ingredient bowl. WHISK until smooth.
  4. PREHEAT an electric griddle to 350°F and SPRAY with cooking spray.
  5. POUR ¼ c of the batter on the pan. COOK until bubbly, about 1-2 minutes.
  6. FLIP and cook until golden brown.
