c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 1 Egg
  • 4 Egg whites
  • ½ c Milk, skim
  • ¾ c Pumpkin puree
  • 2 t Pumpkin pie spice
  • 7 Whole wheat bread slices
  • Cooking Spray
  • 1 T Powdered sugar for garnish, optional


  1. In a medium bowl, WHISK egg, egg whites, milk, pumpkin and pumpkin pie spice.
  2. CUT each slice of bread into 3 equal pieces. * You may leave the slices of bread whole, if desired.
  3. HEAT a large skillet on medium heat. SPRAY with cooking spray.
  4. Lightly COAT a few slices of bread in the batter.
  5. PLACE coated bread in the skillet and COOK for 3-4 minutes on each side. REPEAT for remaining slices of bread. SPRAY skillet with cooking spray again if needed.
  6. When toast is done cooking, SPRINKLE with powdered sugar before serving, if desired.
