Ingredients

  • Cooking spray
  • 1 c Oats
  • ½ c Flour
  • 2 T Brown sugar
  • ½ t Baking soda
  • ¼ c Cranberries, dried
  • ½ c Almonds, sliced or chopped
  • 3 T Honey
  • 2 T Vegetable oil
  • 3 T Applesauce
  • ½ t Vanilla

Directions

  1. PREHEAT oven to 325°F. SPRAY a 12-cup muffin tin with cooking spray.
  2. In a large bowl, COMBINE oats, flour, brown sugar and baking soda. MIX well.
  3. ADD cranberries and almonds. MIX well.
  4. ADD honey, oil, applesauce and vanilla. MIX well.
  5. PLACE 2 T of mixture in each muffin cup (do not pack). BAKE for 12 minutes.
  6. REMOVE from oven and gently PRESS mixture down with a spoon making a cup shape.
  7. BAKE for 2 minutes. Let COOL.
*Fill Granola Cups with yogurt or fruit.
