Ingredients

  • ⅔ c Egg mix*
  • ⅔ c Water
  • ½ t Garlic powder
  • 1 T Dijon mustard
  • ⅛ t Black pepper
  • 2 T Bakery mix, low-fat
  • Cooking spray
  • 1 c Mushrooms, diced
  • ½ c Bell pepper, red, chopped
  • ¼ c Onion, diced
  • ¼ c Tomato, diced
  • ½ c Mozzarella cheese, shredded, part skim
*2/3 cup of egg mix is about 5 whole

Directions

  1. In a small bowl, MIX egg mix, water, garlic powder, mustard, black pepper and bakery mix until smooth.
  2. SPRAY a skillet with cooking spray and SPRINKLE chopped vegetables in the pan.
  3. SAUTÉ vegetables for 1-2 minutes on medium-high heat.
  4. REDUCE heat to medium, ADD egg mixture to the pan and SCRAMBLE the eggs until done.
  5. TOP with mozzarella cheese.
